NOTE: Butchers charge extra to return the giblets (heart, liver, and gizzard) from a bird, which are on average 2-3 ounces per bird; we therefore charge the same price per lb for giblets just to cover their cost. We offer them as a convenience to our customers who appreciate these parts.
