Our rich and delectable pork belly, uncured and unsmoked for use in recipes; each piece is a quarter of an uncured belly. Note that heritage breed pork has more fat than commercial pork, so our belly has a lot more fat on it than what you will find at the grocery store. Great in many East Asian dishes, or use it to do some DIY nitrite-free bacon -- just soak overnight in a solution of salt, brown sugar, and a dash of liquid smoke for a bacon-like experience without the health effects of nitrates/nitrites! No skin.
