Slabs of back fat, unground, usually about 2" thick. Occasionally our processor forgets we want it unground, in which case we offer it pre-ground (great for rendered lard). PLEASE INQUIRE IF OPTION DOES NOT SPECIFY AND YOU WANT A SPECIFIC FORMAT (GROUND VS SLAB).
