NOTE: Our processor charges $1.50 to return the giblets (heart, liver, and gizzard) from a chicken, which are on average 2-3 ounces per bird; we therefore charge $8.5/lb for giblets just to cover their cost. We are not insane; in fact, we do not make a profit from gizzards at all, and offer them as a convenience to our customers who appreciate these parts.
